This cauliflower is tasty, even for cauliflower haters. We eat a lot of veggies at my house, but usually I make my cauliflower into cheesy cauliflower and feed it to the kids in place of macaroni and cheese. Today I really wanted to try something new. I've been thinking about making this for a while and I'm so glad I did! My kids ate a lot of it, I was so happy, even if they dipped it in ketchup.
Italian Oven Roasted Cauliflower
1 head of cauliflower, cut into florets
3 Tbsp olive oil
3 tsp garlic
Salt and Pepper to taste
1/3 cup freshly grated Parmesan cheese
1 Tbsp Italian seasoning
Preheat the oven to 450°. Grease a large casserole dish. Place the cauliflower in a large bag. Add olive oil and garlic and shake to mix. Pour into the prepared casserole dish, and season with salt and pepper to taste. Bake for 25 minutes, stirring halfway through. Top with Parmesan cheese and Italian seasoning and bake for 3 to 5 minutes. Yumm-O!
